Last night was our book club. Since it was at my house I decided to make a Scarlett cake for dessert.
1/2 c. brown sugar 4 eggs
2t. cinnamon 2 c. flour
2t. baking soda 15 oz. can pumpkin
1/2 t. salt 1 apple, cored,
1/4 t. nutmeg peeled, chopped
1/4 t. ginger 1/2 c. chopped
1 c. oil pecans
Mix the first 10 ingredients together; add flour, 1/2 cup at a time. Blend in pumpkin; fold in apple and pecans. Pour into a greased and floured Bundt pan; bake at 350 degrees for 70 minutes. Cool 20 minutes in the pan; remove and complete cooling on a wire rack. Frost when cool. Serves 12.
Frosting: 2 t. vanilla extract 8-pz. pkg. cream cheese, softened
1/2 c. butter, softened 3-1/2 c. powdered sugar
Blend vanilla, butter and cream cheese together, add enough powdered sugar until desired spreading consistency is reached. Enjoy!

That cake is so cute. I love GWTW, too. I've seen the movie a million times and read the book in a marathon reading session when Nolan was a baby. Every time I sat down to feed him, I read.
Cute cake and it was VERY yummy!
That turned out so cute mom, way to go.
Just had to come on an comment even though I already saw the pic. That cake was such a creative idea and it was so much fun to get to eat the leftovers!
I am SO impressed with the cake!!! Wish I could have been there for bookclub. I've got next months' book on CD and get to listen all the way to LaCross and back this week. So, maybe I'll actually finish a book before book club and make it there! We'll see what happens with Mark's schedule!
So funny to read this post today because I bought "Gone with the Wind" jsut yesterday. I have never read it. Cute cake!!
